Part 2: Recipes 2


I was inspired by how well-recieved the Sinner's Sandwich was by the thread that I decided to try and take the key elements of the Sinner's Sandwich (turkey, crunchy cereal, and sweet/tart strawberries) and transform it into another dish. The product of this decision, the Sinner's Schnitzel, is as follows:


First thing's first, some appropriate music to cook by.



Our ingredients. Sauce ingredients are to the left: strawberries, a jalapeno pepper, two cloves of garlic, and a shallot.
Stuff for the breading is to the right: cornflakes and egg.


First, the sauce ingredients get diced up...


...and put into the pan on low heat. This will cook down into a sort of relish or jam. I seasoned it with a little salt and sugar while it cooked down.

The final product ended up halfway between sauce and salsa, and the whole thing ended up a coral pink kind of color. Weird, but it tasted OK. It felt like there was something missing, though. I think I might have been too restrained in seasoning it.


While the sauce is coming together, it's time to get the schnitzels ready. They were out of turkey breast at the store, so I got chicken instead, in this case, thin sliced chicken breast. They were still a little on the thick side, but a some pounding took care of that. That was followed up with a dip in the egg, and then the crushed cornflakes.

Ideally, you should dredge the meat in flour first to make the breading stick better, but I forgot we were out of flour. Also, leaving the schnitzels in the fridge for about 5 minutes to let the breading 'set' helps a little, too.


Once the schnitzels were ready, they got pan-fried. I used butter cut with a little olive oil, but any fat/oil ought to do it.


Final service. Sinner's Schnitzel, with Bachelor ESB. Creme Egg for dessert. Remaining strawberries and a Gin Ricky for after-dinner refreshment.
Lessons learned:
- Dredge in flour first to improve breading.
- Leave white membrane on when dicing jalapenos to increase heat.
- Be more heavy-handed when seasoning sauce. Never be timid when cooking, right Zach?
- To bring thing's full circle, this can be served in a hoagie bun, making the Sinner's Schnitzel Sandwich. But then the universe might implode.
