If I had one word to describe the Onion Knight, it would be "crap". If I had two, I would say "shit garbage". Like Freelancer and Red Mage, the Onion Knight has access to magic without being useless for physical damage, so it can fill pretty much any role in battle. Or, well, it would be able to, except for the fact that the Onion Knight's stats are the worst in the game until after level 90. On top of that, their MP is just as limited as the other "all schools" casters and Onion Knights gain job levels incredibly slowly (they have the slowest job level progression in the game) and your magic options are hindered pretty badly, plus Onion Knights don't even have access to the best offensive spells in the game. What that leaves you with is a class that hits enemies particularly well with physicals, but only if you're above level 90, and even then, they're not much better than other classes. With high-tier physical classes you'd see a hit count difference of 2 on your attacks. With the game's slowest class, it would be about 7.

The only thing that the Onion Knight exists for is to have 99 in all stats at level 99. It's not ahead of the curve with physicals and it's garbage with magic. It can use any type of equipment, but what that really means is that it can use whatever equipment has the highest Attack/Defense. There is a special set of equipment for the Onion Knight, in fact, which offers the highest equipment stats and protects against all status effects (it's not the only equipment to do so), but it's a rare drop from a powerful enemy that only shows up in two places (one is the final dungeon), so that's another grind if you want to fully kit out any of the kids. Essentially, Onion Knight is a gimmick class where the gimmick is grinding. As the final nail in the coffin, the Onion Knight is only unlockable via Mognet: in the DS release of the game, most players probably won't even see it. An awful class and an awful quest reward.
