Part 30: Octatonic makes Omelette

Omelette "An egg-based dish loved by both children and adults."
Ingredients:
Egg
Rice
Onion

While the idea of rice being in an omelette might be a bit strange to some westerners, Omurice is a very popular Japanese fusion dish. Being discriminating, fun-loving, sophisticated goons I'm sure you're all familiar with Cooking With Dog's interpretation of the dish. As you can see, there are a fair number of ingredients, but ultimately it's a pretty unassuming, straightforward dish.

Straightforward. Humble. This is where the Mysterious Wonder Chef comes in. He asks us, at its heart, what exactly is omurice? It's an omelet with fried rice in it. Sure you could say the entire chickenrice is an ingredient on its own, but that's not bold enough for our teacher. The Wonder Chef demands that we chase the dish's essence.


Onion. Eggs. Cooked Rice.


3/4 of the onion sliced, and caramelizing over medium heat. Patience will reward you.


Caramelized onions, a touch of sweet soy sauce, a touch of water, blended and strained through a chinois. You are worth the extra effort.


Fried rice with the rest of the onion, seasoned with soy sauce.


Wrap your ingredients in an omlette and serve the sauce on top. Hot, just enough texture, and a sweet, deep onion demi-glace.

Omurice.
